Easy Vegetable Casserole



A classic, easy recipe in which you can add your favourite vegetables.

Ingredients:

4 tablespoons margarine
2 tablespoons corn starch
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
4 cups cooked vegetables
1/4 cup seasoned bread crumbs
1 tablespoon melted margarine

Directions:

In small saucepan melt the 4 Tbsp. margarine over low heat. Stir in corn starch, salt and pepper until smooth.

Remove from the heat. Gradually stir in the milk until smooth.

Bring to boil over a medium heat, stirring constantly, and boil for 1 minute.

Stir in vegetables.

Place into a large casserole dish.

Mix the seasoned bread with the melted margarine.

Sprinkle on top of the casserole.

Bake in 375 degree oven 25 minutes or until heated.

A Classic Waldorf Salad

Ingredients:

5 whole organic apples, chopped, unpeeled
2 1/2 stems chopped celery
1 1/4 cup chopped pecans, walnuts or cashews
1/2 cup Soy Mayonnaise
Lettuce leaves
Apple wedges
Pecan halves

Directions:

Combine the apples, nuts, celery and mayonnaise.

Toss gently to coat, and leave in the fridge for 1 to 2 hours.

Spoon the salad into a serving bowl (lettuce-lined) .

Garnish with apple wedges and pecan halves.

This should make approximately 10 servings.
